Loaded Savoury Oatmeal and Lentil Bowl

This was a triumph.

With only three main ingredients (oats, red lentils and vegetable stock), this recipe was quick, cheap and sickeningly simple.

We chose to top our bowls off with cajun peppers, tomato & onion salsa, houmous, baked tofu strips and crushed peanuts. Next time, I’ll definitely be whipping out the avocado!

Steps:

1. Mix oats, lentils, garlic and vegetable broth in a saucepan and bring to a low boil. Reduce the heat and let it simmer for 8-12 mins until thick.

2. Season with salt & pepper and spoon it into a bowl.

3. Add the toppings of your choice!
