Sweet Potato Toast

It’s time to bid avocado toast, courgetti and nice cream a well-earned adieu. 2017 is here and it’s ready to introduce its own plethora of culinary crazes. 

Scrolling through Pinterest, I came across sweet potato toast – the lazy chef’s dream. Sadly, my toaster wasn’t as powerful as it could’ve been, meaning that the slices took much longer to cook (should be 5 mins – took about 15). That said, it made a very tasty, filling, relatively quick and easy brunch! 


What was so great about this recipe was the versality of it, as it could be made sweet or savoury depending on the person, time of day or mood. Personally, I went with three savoury toppings and one sweet: 

  • Peanut butter & banana
  • Houmous & peashoots (or any leafy green)
  • Tahini & red pepper
  • Mashed avocado with Sriracha sauce


It’d make a really fun brunch option with friends or family – just buy a load of topping options and get cracking! 

INGREDIENTS:

  • 1 medium sweet potato cut into 1/4 inch slices
  • Suggested toppings:
    • Peanut butter & banana
    • Houmous & peashoots (or any leafy green)
    • Tahini & red pepper
    • Mashed avocado with Sriracha sauce

INSTRUCTIONS:

  1. Lengthwise, cut the sweet potato into slices (about 1/4 inches thick).
  2. Toast the slices for aprox. 5 minutes. This will vary depending on the power of your toaster/thickness oft the slices.
  3. Top with the toppings of your choice!
